Minted Cucumber-Yogurt Refresher

2 cucumbers, peeled, seeded, and shredded, diced, or sliced
1 cup plain yogurt
1 scallion (white and green parts), minced or thinly sliced
1 tablespoon chopped fresh mint (½ teaspoon dried)

Combine all the ingredients. For the best flavour refrigerate for at least an hour before serving. Serve chilled.
