Menu from our last Insight Meditation retreat...


Friday Dinner

Miso Soup (Fresh bread, rice crackers, wild leek pesto)
Plain White Basmati Rice (seaweed Gomasio)
Beet greens stir-fry
Tamari almonds, roasted sunflowers and pumpkin seeds
Chaga mushroom tea


Saturday Lunch

Winter Squash Soup
Herbs Omelet with tomato sauce
Plain rainbow quinoa
Steam kale
Greens with balsamic dressing, sharp cheddar, nuts
Bee Balm Tea


Saturday Tea

Spicy sauce
Plain brown rice
Nori Rolls, dipping sauce, wasabi, pickle ginger
Green Salad and Miso Dressing
Mint and rose tea

Sunday Lunch

Leftover soups and rice, garlic bread
Quinoa tabbouleh
Leftover salads, carrot salad, greens, ...
Goat cheese, pesto, vegetable pâté, bread, crackers, ...
Chaga mushroom tea

    Thank you so very much for all the love,awareness,and presence you gave us in the beautiful nurturing food for our retreat~ it is such an integral support piece during a retreat,and I felt deeply held by your nourishing meals!

    What a joy to have such lovingly prepared food just appear for the taking! I particularly am grateful to be able to eat mostly fresh, local + in season... I have been eating off the land for a long time but had never had wild leek pesto - a new favorite! I also particularly liked the mung beans in coconut milk (we grow coconuts, here, right? :) and the lavender cookies.
    It was especially nice to have foods prepared by Lydia, Emma & ...um... Cassandra? brought to us with such glowing faces.

    I guess food is supposed to taste better when you are being mindful, but that being said, all of the food was amazing! Just right for the comfort you need on this type of retreat. Healthy and tasty. Thank you very much.

  2. Hello, thank you all again for the great food: a real essential support tool for our meditation process....i'm trying all the possible angles here (i already sent an e-mail to Jon) to try and find the Mung Bean in coconut milk recipe..it was too delicious..
